Veggie Meatloaf

Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly grease a loaf pan.

Sauté aromatics (recommended for meatloaf).

Cook onion in a small skillet over medium heat 4-5 minutes until softened.

Add garlic for the final 30 seconds. Cool slightly.

In a large bowl, whisk eggs, milk, ketchup, worcestershire, and seasonings.

Add breadcrumbs and cooled onion mixture. Mix to hydrate crumbs.

Fold in ground meat gently. Do not overmix — this prevents toughness.
8.
Shape into loaf (about 9x5 inches) on baking sheet for better browning, or press into loaf pan.

Apply a ketchup glaze to top.
10.
Bake 50-60 minutes or until internal temperature reaches 160°F (71°C) for beef.

2 lbs 93-96% lean ground beef (or lean ground turkey)
1 cup finely diced onion, peppers, carrots
2 cloves garlic, minced
1 cup whole-wheat breadcrumbs (or quick oats)
2 large eggs
⅓ cup low-fat milk (or unsweetened almond milk)
½ cup ketchup
1 Tbsp worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried thyme (or Italian seasoning)
½ tsp smoked paprika (optional)

I would specifically like help with creating more tenderness given the lean meat.
