Totally fair! It's not traditional for classic American-style meatloaf, but small amounts of warming spices can enhance savory dishes. I kept it to about 1/8 teaspoon so it wouldn't dominate.

That makes sense. It gave it a deeper aroma, especially paired with the tomato glaze. I've only ever used cinnamon in sweeter applications, so this was new territory for me.

Thank you so much for trying it! I'm glad the textures worked out for you. The cinnamon is subtle on purpose — I was aiming for a warm, almost Mediterranean undertone without making it taste sweet.

I tried your suggestions and the addition of veggies and bread crumbs really helped to improve both the texture and flavor. I also tried adding cinnamon and it helped as well, adding a different unique flavor to the entire dish. Was there a reason you suggested it?
