Instructions

  1. 1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly grease a loaf pan.
  2. 2.Sauté aromatics (recommended for meatloaf).
  3. 3. Cook onion in a small skillet over medium heat 4-5 minutes until softened.
  4. 4.Add garlic for the final 30 seconds. Cool slightly.
  5. 5. In a large bowl, whisk eggs, milk, ketchup, worcestershire, and seasonings.
  6. 6.Add breadcrumbs and cooled onion mixture. Mix to hydrate crumbs.
  7. 7. Fold in ground meat gently. Do not overmix — this prevents toughness.
  8. 8.Shape into loaf (about 9x5 inches) on baking sheet for better browning, or press into loaf pan.
  9. 9.Apply a ketchup glaze to top.
  10. 10.Bake 50-60 minutes or until internal temperature reaches 160°F (71°C) for beef.

  • 1 cup finely diced onion, peppers, carrots
  • 2 cloves garlic, minced
  • 1 cup whole-wheat breadcrumbs (or quick oats)

  • ⅓ cup low-fat milk (or unsweetened almond milk)
